Breakfast can be challenging if mornings are busy for you. It can be tempting to hit that snooze button, sleep 10 minutes more, hustle everyone out the door before heading to work, or whatever your morning looks like! Breakfast really is the most important meal of the day.
I find for me it sets the tone for the day. If I have something sweet, I tend to want sugar the rest of the day. If I have a greasy breakfast sandwich, I feel sluggish and want junk the rest of the day.
So one of the best things I know I can do for myself is have a balanced healthy breakfast! Even if that means getting up 10 minutes earlier to make some eggs.
For all my non-egg lovers, here is a healthy breakfast that has no cooking required!
INGREDIENTS
1/2 cup, rolled oats
1 tsp, cinnamon
1 tsp, Stevia In the Raw, if desired
2 cup, berries (mixed) fresh or frozen
4 Tbsp, collagen protein
1/2 cup, skim milk
1/2 cup, cottage cheese-low fat
DIRECTIONS
Mix all ingredients together in a jar the night before serving. Top with fresh or frozen berries.
Place in jars and refrigerate overnight.
Feel free to add in other ingredients like chia, flax, or nuts for additional nutrition.
These overnight oats are served cold so there's no need to heat them up, but you can if you want to! You can replace the milk with another milk of choice, almond, soy, etc.
Allow the oats to rest in the fridge for at least 6 hours or overnight if possible. Add different flavorings such as vanilla. Top with your favorite berries, frozen unsweetened berries work great too
